Yummy new hobby!


As you know I started to follow Weight Watchers.......LOVE IT!!!
It is so easy to follow and I don't even feel like I am on a "diet" which I guess is a good thing right?

At the meetings they have all kinds of goodies out (the kind of goodies I used to love). The kind they have out are all the Weight Watchers snacks and cook books and recipes and gadgets.....etc, etc......

So there was a couple of starter kits that came with some necessary items. For example in these kits they have books with every food imaginable and their points value! I can't go wrong with that by my side!

Anyone who knows me knows that I can't just get the little starter kit I have to get the Super Duper Deluxe starter kit.......this has EVERYTHING including an electronic points finder!!!!!
It also comes with a fantastic cookbook, which has a ton of what I call "Real Life" recipes in it.

This will make my life so much easier because all these recipes are foods that the whole family will eat!!!! This means I don't have to cook food for my family and then sit down with a different "diet" meal for myself!!!! LOVE IT!!!!!!

I want to share with you the recipe that I tried last night. So easy, hardly any prep time and it was extra yummy!!!!

Feta Stuffed Chicken Breast (makes 4 servings, 4 points per serving)

Here is what you need-
2 ounces fat free feta cheese, crumbled
2 moist packed sun-dried tomatoes(not packed in oil) finely chopped
4 large basil leaves, chopped
1/4 teaspoon of each salt and pepper
1/4 cup of Panko (Japanese bread crumbs)
4 (5oz) Skinless, boneless chicken breasts
4 teaspoons fat free mayonnaise

Here's what to do-
1. Preheat oven to 425. Spray non stick baking pan with nonstick spray.
2. In a small bowl, mix together Feta, Sun-dried tomatoes, Basil,
Salt and Pepper until blended

3. Cut pocket about 2 1/2 inches long in each chicken breast and place on baking pan. Put 1/4 of the Feta mixture in each breast and press edges closed.

4. Brush the top of each stuffed breast with the mayonnaise and then coat the top of the chicken with the panko bread crumbs.

5. Lightly spray the chicken with the nonstick spray and put in the oven for about 25 minutes or until chicken is cooked through and bread crumbs are golden.

I actually surprised myself , it came out fantastic! Maybe I can make a hobby out of learning how to cook? I wonder what I am going to try tonight???????

  1. I think I have actually made this recipe before years ago. It's terrific! Both my kids ate it too! Im glad to see you are enjoying the meetings. Im gonna get my butt in gear too and go, then me and you will keep tabs on each other. Are you going to the gym too?
